Ingredients

  • 4 medium onions, chopped
  • 4 cloves garlic, minced
  • 1/3 c. salad oil
  • 12 medium size, ripe tomatoes (skins off)
  • 1 green pepper, chopped
  • 1 1/2 tsp. salt
  • 3/4 tsp. pepper
  • 1/4 tsp. anise seed
  • 1 Tbsp. oregano leaves
  • 1 tsp. paprika
  • 1 Tbsp. rosemary leaves
  • 1 c. red cooking wine or dry red wine

Directions

    Put tomatoes in boiling water for 1 minute.

    Then put tomatoes in cold water to take off skins.

    Cut tomatoes into eighths. Bring tomatoes to a boil and stir to break up.

    Add other ingredients; cover and simmer 1 hour.

    Remove cover and boil to reduce liquid.
