- 2 1/4 c. chopped onions
- 2 medium green peppers
- 11 c. tomatoes
- 3 c. tomato paste
- 2 Tbsp. brown sugar
- 2 Tbsp. minced parsley
- 1 3/4 Tbsp. salt
- 1 Tbsp. oregano
- 1/2 tsp. pepper
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 2 Tbsp. vinegar
Directions

1Brown beef; add onions and green peppers and cook slowly until tender.

2Add remaining ingredients and simmer until thick enough to serve.

3Skim off excess fat before canning.

4Pour hot, into hot jars, leaving 1-inch headspace.

5Remove air bubbles.

6Adjust caps. Process pints 1 hour at 10 pounds pressure.
