- 8 Tbsp. oil or shortening
- 6 medium onions, chopped
- 4 stalks celery, chopped
- 2 c. green pepper, chopped
- 2 tsp. salt
- 2 tsp. oregano
- dash of pepper
- 3 c. tomato paste
- 1 c. tomato sauce
- 14 c. tomatoes, chopped and peeled
Directions

1In a frying pan, cook onions, celery and green peppers in oil until tender.

2In a large saucepan or Dutch oven, add these to remaining ingredients and simmer, covered, for several hours until desired thickness is reached.

3Stir occasionally.

4Cook, uncovered, for last of period of time to hasten thickening.
