  • 1 bushel tomatoes (ripe)
  • 3 lb. onions
  • 8 garlic cloves
  • 4 or more hot peppers
  • 1 pt. oil
  • 1 gal. tomato paste
  • 1 c. sugar
  • 2 Tbsp. basil
  • 2 Tbsp. oregano
  • 2 Tbsp. parsley
  • 2 Tbsp. Italian seasoning
  • salt (1 tsp. in each qt. jar)

    Prepare tomatoes.

    Put into blender through a strainer.

    Cook in enamel or stainless.

    Cook down a bit.

    Finely chop garlic, onions and peppers.

    Put in oil.

    Stir to bring to a boil and simmer 30 minutes, then add to tomato juice.

    Also add the spice, sugar and paste.

    Cook 1 hour or more.

    Stir often.

    Can in sterilized jars.

    Place salt in jars before you fill them.
