  • 10 cups onions, diced
  • 2 tablespoons virgin olive oil
  • 4 lbs beef
  • 10 lbs pork
  • 1 teaspoon garlic, instant minced
  • 128 ounces tomatoes, diced
  • 210 ounces tomato sauce
  • 2 cups sugar
  • 2 tablespoons dry basil
  • 1 teaspoon dry oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

    Saute sliced onions in olive oil; add minced garlic to onions and soften lightly.

    Remove onions when browned.

    Run stewed and diced tomatoes through blender for desired consistency.

    Add tomato sauce, sugar, parsley, basil, oregano, garlic powder, salt, and black pepper to a heavy bottom pot and bring to a strong simmer.

    Lower temperature to have a 12 bubble simmer (10 to 14 bubbles) uncovered for 45 minutes.
