Spaghetti Squash Bake

  • 4 servings cooked spaghetti
  • 1 lb. Italian sausage
  • 1 pkg. Ricotta cheese
  • 2 small zucchini, cubed
  • 2 small yellow squash, cubed
  • 1 medium onion, chopped
  • 1 c. fresh mushrooms, chopped
  • 1/2 c. red wine vinegar
  • 1/4 c. olive oil
  • 2 Tbsp. Italian seasoning
  • 1 garlic clove, crushed
  • 1 large pkg. Mozzarella cheese
  • 2 large cans tomato sauce
  • 1 can tomato paste

Directions

    Brown sausage and drain.

    In a skillet, saute oil, peppers, onion, mushrooms, garlic, red wine vinegar, squash and seasoning until tender.

    Add tomato sauce and paste; simmer 10 minutes in a greased baking dish.

    Add layers spaghetti, sauce, Ricotta cheese and Mozzarella cheese.

    Bake at 350° until brown and bubbly.
