Spaghetti Squash Primavera

Ingredients
- 1 (2 lb.) spaghetti squash
- 1 Tbsp. butter
- 2 oz. grated Parmesan
- 1/2 bunch broccoli flowerets
- 1 c. shelled peas
- 1 small zucchini, julienned
- 3/4 c. sliced mushrooms
- 1 tsp. salt
- pepper to taste
Directions

1Cut squash lengthwise in half and remove seeds.

2Boil until poked easily with a fork, about 20 minutes.

3Cool and scoop squash out into a bowl.

4Toss squash with butter and Parmesan.

5While squash is cooking, cook veggies, then toss with the squash after it has been cooked and cooled.

6Saute mushrooms and toss them in.

7You can put all this in a greased casserole and sprinkle with cooked bacon.

8Heat at 350° until adequately warmed.
