Spaghetti With Mussels

- 14 oz spaghetti
- 1/4 cup olive oil
- 3 clove garlic, chopped
- 1 None red chili, sliced
- 1 cup white wine
- 2 (14 oz cans) diced tomatoes
- 1 lb mussels
- 2 tbsp chopped parsley, plus extra, to serve
- None None crusty bread, to serve
Directions

1In a large saucepan of boiling salted water, cook spaghetti following packet instructions. Drain well, set aside and keep warm.

2Meanwhile, heat oil in a large pot or pan on medium. Saute garlic and chili 1-2 minutes. Pour wine into pan and simmer 1-2 minutes. Add tomatoes and bring to a boil, stirring.

3Add mussels. Cover and cook 2-3 minutes, shaking occasionally, until mussels open.

4Add spaghetti to mussels. tossing to coat in sauce. Season to taste and stir in chopped parsley. Sprinkle with extra parsley. Serve hot with crusty bread.
