  • 1 bunch gr. onios diced
  • 2 bunches leeks, diced
  • 1/2 c. parsley,chopped
  • 1/2 c. dill, chopped
  • 1/4 tsp. nutmeg
  • 2.5 lbs. spinach
  • 1/2 c. olive oil
  • s & p to taste
  • 4 eggs, lightly beaten
  • 1/2 lb. feta
  • 1/4 c. melted buttr
  • 1/4 c. olive oil
  • 1 phyllo pastry

    Wash and drain chopped spinach.

    Heat oil in large dutch oven. Saute the onions and leeks until tender. Add spinach, parsley and dill and cook 5 to 10 minutes Add nutmeg and S & P.

    In large mixing bowl, combine the feta and eggs. Add cooled spnach mixture.

    Melted butter and oil for philo.

    Bake 375 for 30 - 40 minutes
