  • 1 pkg. phyllo dough (thawed)
  • 4 pkg. frozen spinach
  • 2 lb. Feta cheese
  • 4 tsp. olive oil
  • 2 eggs
  • 2 sticks butter

Directions

    Cook spinach; drain (squeeze out any moisture).

    Break Feta into spinach.

    Mix 2 teaspoons olive oil and 2 eggs with mixture. Melt 2 sticks butter with 2 teaspoons olive oil. Spray cookie sheet, brush each phyllo with butter/oil mixture.

    Lay 12 sheets of phyllo, spoon mixture on, then continue with 12 remaining sheets of phyllo.

    Bake at 350° for 25 to 30 minutes (until golden brown).

    Cool before cutting.

    Can be served hot as a meal or great cold as an appetizer.
