- 2 lbs. fresh spinach
- 1 c. uncooked rice
- 2 medium onions, minced
- 1 small clove garlic, minced
- 2 Bay Leaves
- 2 c. beef broth
- 2 Tbsp. tomato sauce
- 1/2 c. olive oil
- salt and pepper
Directions

1Wash and dry the spinach, and tear into pieces.

2Saute the onions, garlic and rice in olive oil until the onions are soft and golden; add tomato sauce, and stir.

3Add spinach, bay leaves, salt and pepper; mix well.

4Add broth, cover and simmer over low fire for 20 minutes.

5This is normally served hot as a side dish, but it is also excellent cold.
