Spanish Bean Soup

  • 1 lb. streak o' lean salt pork, diced
  • 1 lb. ground round steak (don't use plain hamburger, too greasy!)
  • 3 to 4 large potatoes, peeled and diced
  • 3 large green peppers, diced
  • 3 large yellow onions, diced
  • 2 (1 lb. size) cans tomatoes
  • 2 (1 lb.) size cans kidney beans (not chile beans!)

Directions

    Put the tomatoes and kidney beans into a large soup pot to simmer.

    Fry out diced salt pork; remove from grease and discard. Add chopped vegetables and ground round and brown, turning to prevent burning as onions burn easily.

    When nicely browned and done, add to soup pot with tomatoes and beans; salt to taste (go easy).

    Add generous amount of black pepper.
