- 1 lb cream cheese
- 3 tablespoons butter
- 1 1/2 cups sugar, Granulated
- 2 large eggs
- 1/2 teaspoon cinnamon, Ground
- 1 teaspoon lemon, rind of, Grated
- 1/4 cup unbleached flour
- 1/2 teaspoon salt
- confectioners' sugar
Directions

1Preheat the oven to 400 degrees F.

2In a large mixing bowl, cream the cheese, 1 tb of the butter and the sugar.

3Do not beat.

4Stir in the eggs, one at a time, beating well after each addition.

5Add the cinnamon, lemon rind, flour, and salt; blend well.

6Butter the pan with the remaining 2 tb of butter, using your fingers to spread the butter completely.

7Pour the mixture into the prepared pan and bake for 12 minutes at 400 degrees, then reduce the temperature to 350 degrees and bake for another 25 to 30 minutes.

8The knife should come out clean.

9Cool the cake to room temperature, then sprinkle with confectioners' sugar.
