- 1/4 tsp. pepper
- 1/2 c. chopped onion
- 2 cubes chicken bouillon
- 1 c. tomato juice
- 1 (10 oz.) pkg. frozen peas, broken apart
- 1 tsp. salt
- 3 Tbsp. shortening
- 1 clove garlic, minced
- 2 c. boiling water
- 1 c. long grain rice
- 1/4 c. chopped pimiento
Directions

1Season chicken with salt and pepper.

2Brown in melted shortening.

3Add onion and garlic; cook until onion is just tender. Dissolve bouillon cubes in boiling water; add 1/2 cup broth to chicken along with the tomato juice.

4Cover; simmer 20 minutes.
