  • 2 1/2 pounds chicken parts assorted small, cut breasts into halves
  • 1 pound mini sweet peppers
  • 1 1/2 tablespoons oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup light mayonnaise
  • 1 clove garlic pressed
  • 1/2 teaspoon smoked paprika
  • baguette for serving

Directions

    Toss chicken and peppers with oil, salt and pepper. Arrange on baking sheet. Roast for 35 minutes or until chicken is cooked (165 degrees F).
