- 1 pound mini sweet peppers
- 1 1/2 tablespoons oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup light mayonnaise
- 1 clove garlic pressed
- 1/2 teaspoon smoked paprika
- baguette for serving
Directions

1Toss chicken and peppers with oil, salt and pepper. Arrange on baking sheet. Roast for 35 minutes or until chicken is cooked (165 degrees F).
