- 1 medium eggplant
- 3 beaten eggs
- 1 can Ro-Tel tomatoes, chopped
- 1 c. grated cheese
- 12 saltine crackers, crushed
- salt and pepper to taste
- 1/2 c. chopped onion
Directions

1Peel eggplant and

2cut in thin slices.

3Cook in salted boiling water

4(with onion) until transparent.

5Drain well and beat slightly with fork.

6Mix eggs, crackers, salt, pepper and 3/4 cup cheese together.

7Add eggplant

8and put in well-buttered casserole. Top with remaining cheese.

9Bake at 350° for 30 minutes.
