- 1 medium eggplant, cut in small pieces
- 3 Tbsp. bacon drippings
- 2 small chopped onions
- 1 (16 oz.) can stewed tomatoes
- 1 Tbsp. parsley
- 1 tsp. sugar
- 1/8 tsp. pepper
- 1 tsp. chili powder
- 1/2 c. Cheddar cheese
- 1 c. buttered bread crumbs
Directions

1Saute eggplant in bacon drippings.

2Place in casserole dish. Saute onions and stir in tomatoes, parsley, sugar, salt, pepper and chili powder.

3Heat to boiling.

4Pour over eggplant.

5Top with cheese and bread crumbs.

6Bake at 350° for 30 minutes.
