- 1 large or several small baked or boiled potatoes, chilled or substitute 1 c. unsauced spaghetti or egg noodles, cut into 3-inch lengths
- 1 medium onion
- 1 medium zucchini
- 1/2 green pepper
- 3 eggs
- 1/4 c. grated Parmesan cheese
- salt and black pepper to taste
- 2 Tbsp. olive oil
- 3 Tbsp. water
Directions

1Cut potatoes, onion, zucchini and green pepper into medium dice.

2Using medium-high heat, in a nonstick 10-inch skillet, saute potatoes, onion, zucchini and green pepper in 2 tablespoons olive oil until lightly browned.

3Reduce heat to medium and add 3 eggs that have been beaten with 3 tablespoons of water, salt and pepper.
