Spanish Frittata

Ingredients

  • 1 large or several small baked or boiled potatoes, chilled or substitute 1 c. unsauced spaghetti or egg noodles, cut into 3-inch lengths
  • 1 medium onion
  • 1 medium zucchini
  • 1/2 green pepper
  • 3 eggs
  • 1/4 c. grated Parmesan cheese
  • salt and black pepper to taste
  • 2 Tbsp. olive oil
  • 3 Tbsp. water

Directions

    Cut potatoes, onion, zucchini and green pepper into medium dice.

    Using medium-high heat, in a nonstick 10-inch skillet, saute potatoes, onion, zucchini and green pepper in 2 tablespoons olive oil until lightly browned.

    Reduce heat to medium and add 3 eggs that have been beaten with 3 tablespoons of water, salt and pepper.
