  • 2 cups instant rice
  • 1 can tomato sauce
  • 1 can sliced mushrooms sliced
  • 1/2 cup onion chopped
  • 1/2 bell pepper chopped
  • 3 eggs separated
  • swiss cheese Sliced
  • sliced green olives

Directions

    Cook rice according to package directions, drain, add tomato sauce and simmer.

    Saute' onions, bell pepper and mushrooms.

    Add to rice mixture.

    Beat egg whites and then egg yolks and all beaten yolks to beaten whites.

    Pour eggs into fry pan and cook omlette until almost done.

    Spread on rice mixture.

    Top with Swiss cheese and chopped green olives.

    Slice and serve with chips.
