  • 4 to 5 medium potatoes
  • 3 Tbsp. chopped onion
  • 3 Tbsp. chopped green pepper
  • 4 Tbsp. mayonnaise
  • 4 Tbsp. cream
  • 2 Tbsp. chopped red pimentos
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. grated yellow cheese (Colby)

Directions

    Boil potatoes.

    Cool and peel.

    Cut into 1/2-inch thick round slices.

    Combine remaining ingredients in a separate bowl.

    Coat the bottom and sides of a shallow 2-inch baking dish with butter. Arrange a layer of sliced potatoes on the bottom and spread with mayonnaise combination.

    Repeat and top with another layer of spread.

    Bake in a 375° oven for about 15 minutes or until all cheese topping melts.
