- 6 slices bacon, diced
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 3 c. cooked rice
- 1 (1 lb.) can tomatoes
- 1 1/2 tsp. salt
- 1 large tomato sauce
- 1/2 tsp. pepper
Directions

1Fry bacon in skillet until crisp; remove bacon and drain. Pour off all but 2 tablespoons of drippings.

2Add onion and green pepper to drippings in skillet; cook and stir until onions are tender.

3Stir in bacon and remaining ingredients.

4Bake in 350° oven for 30 to 35 minutes; do not cover.

5You can also use sausage or frankfurters in place of bacon.
