Spanish Rice

  • 1/2 c. margarine
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 (16 oz.) cans tomatoes, cut up
  • 1/2 tsp. celery salt
  • 3/4 c. rice (uncooked)
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. green stuffed olives
  • green pepper rings for garnish

Directions

    Melt margarine in microwave; add onions and green pepper. Microwave on High for 5 minutes.

    Add tomatoes and celery salt; microwave on High for 6 to 8 minutes or until tomatoes come to a boil.

    Add rice, cheese and olives; stir well.

    Microwave on 30% power for 30 minutes or until rice is tender.

    (It takes a little longer.)

    Stir; garnish with green pepper.
