- 1/2 c. margarine
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 (16 oz.) cans tomatoes, cut up
- 1/2 tsp. celery salt
- 3/4 c. rice (uncooked)
- 1/2 c. grated Cheddar cheese
- 1/2 c. green stuffed olives
- green pepper rings for garnish
Directions

1Melt margarine in microwave; add onions and green pepper. Microwave on High for 5 minutes.

2Add tomatoes and celery salt; microwave on High for 6 to 8 minutes or until tomatoes come to a boil.

3Add rice, cheese and olives; stir well.

4Microwave on 30% power for 30 minutes or until rice is tender.

5(It takes a little longer.)

6Stir; garnish with green pepper.
