  • 1/2 c. grated onion
  • 1/2 c. diced green pepper
  • 1 1/2 c. instant rice (uncooked)
  • 1/3 c. vegetable oil
  • 1 1/2 c. water
  • 2 (8 oz.) cans tomato sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. lemon juice

Directions

    In a large frypan saute onion, green pepper and rice in the vegetable oil until rice is golden brown.

    Add water, tomato sauce, sugar, salt, pepper and lemon juice.

    Cover and bring mixture to a rolling boil.

    Uncover and reduce heat; simmer 10 minutes.

    Makes 4 to 6 servings.
