- 4 slices bacon
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 1 (16 oz.) can whole tomatoes, undrained
- 1 (8 oz.) can tomato sauce
- 2 tsp. sugar
- 1 tsp. salt
- 1 1/3 c. uncooked long grain rice
- 1/2 c. shredded Cheddar cheese
Directions

1Cook bacon in a large skillet until crisp.

2Remove bacon, reserving 2 tablespoons drippings in skillet.

3Crumble bacon and set aside.

4Saute onion and green pepper in drippings until crisp-tender.

5Drain tomatoes, reserving liquid.

6Add enough water to liquid to make mixture equal 1 3/4 cups.

7Chop tomatoes.

8Add tomatoes, tomato liquid, tomato sauce and next 3 ingredients to onion mixture.

9Bring to a boil, stirring constantly.

10Spoon mixture into a lightly greased 2-quart baking dish.

11Cover and bake at 350° for 35 to 40 minutes or until rice is tender.

12Stir rice; sprinkle with cheese and bake an additional 5 minutes. Sprinkle with bacon.
