Ingredients
- 1 c. uncooked long grain rice
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1 Tbsp. corn oil margarine
- 2 c. water
- 2 chicken bouillon cubes
- 1/4 tsp. basil
- cumin to taste
- 1 medium tomato, peeled and chopped
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. shredded Cheddar cheese
Directions

1Saute rice, onion and garlic in margarine in skillet until rice is golden brown.

2Add water, bouillon, basil, cumin, tomato, salt and pepper; mix well.

3Bring to a boil; reduce heat.

4Simmer, covered, for 15 to 20 minutes, or until rice is tender and liquid is absorbed.

5Top with cheese.

6Let stand for several minutes to melt cheese.
