Spanish Rice

  • 1 c. uncooked long grain rice
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp. corn oil margarine
  • 2 c. water
  • 2 chicken bouillon cubes
  • 1/4 tsp. basil
  • cumin to taste
  • 1 medium tomato, peeled and chopped
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. shredded Cheddar cheese

Directions

    Saute rice, onion and garlic in margarine in skillet until rice is golden brown.

    Add water, bouillon, basil, cumin, tomato, salt and pepper; mix well.

    Bring to a boil; reduce heat.

    Simmer, covered, for 15 to 20 minutes, or until rice is tender and liquid is absorbed.

    Top with cheese.

    Let stand for several minutes to melt cheese.
