Spanish Rice

  • 1 c. rice
  • 3 c. boiling water
  • 1 tsp. salt
  • 1 garlic clove, chopped
  • 1 onion, diced
  • 1 small green pepper, diced
  • 1 1/2 c. stewed tomatoes
  • 3 Tbsp. olive oil
  • 1 stalk celery, chopped
  • 1 tsp. paprika
  • 1 tsp. oregano

    Saute onion, pepper, garlic and celery in oil in skillet. When tender, add rice.

    Stir until well mixed and grains are semi-fried.

    Add tomatoes, seasonings and hot water.

    Stir until well mixed.

    Do not cover.

    Cook over very low heat until rice is dry, light and fluffy, 20 to 25 minutes.
