- 3 (6 ounce) cans tuna in olive oil, drained and flaked
- 1 large egg, lightly beaten
- 12 cup fresh cilantro, coarsely chopped
- 13 cup plain breadcrumbs
- 2 tablespoons light mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 12 cup prepared salsa
Directions

1In a medium bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, and lemon juice.

2Mix together until ingredients just hold together.

3Scoop out 1/3 cup tuna mixture and form into patty.

4Repeat with remaining tuna mixture.

5You should have 8 patties.

6Heat olive oil over medium heat in large skillet.

7Working in batches, cook cakes until golden brown on both sides, about 2 minutes per side.

8Serve hot accompanied with salsa.
