- 1 c. uncooked rice
- 1/4 c. butter, margarine or vegetable oil
- 1 medium onion, thinly sliced
- 1/2 medium green pepper, diced
- 2 c. stewed tomatoes with juice
- 1 tsp. salt
- dash of pepper
- 1 c. water
Directions

1Heat butter in saucepan; add onion, green pepper and rice. Cook and stir over high heat until lightly browned.

2Add tomatoes, water, salt and pepper.

3Mix well.

4Bring gently to boil.

5Cover tightly, lower heat and simmer gently for 30 minutes.

6Serves 4 to 6.
