Spanish Rice

  • 3/4 c. raw rice
  • 1 tsp. salt
  • 2 c. water
  • 1 garlic clove
  • 1 1/2 c. chopped onion
  • 5 strips bacon
  • 3 1/2 c. tomatoes, drained
  • 1 c. tomato puree
  • 2 tsp. sugar
  • 1 1/2 c. chopped celery

Directions

    Cook rice in 2 cups water with salt until fluffy.

    Fry bacon, add vegetables and cook until tender.

    Mix with rice, place in casserole dish and dot with butter.

    Bake at 375° for 30 minutes. Yields 8 servings.
