Ingredients

  • 3 slices bacon
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp. salt
  • 1 tsp. or less crushed red pepper
  • 1 Tbsp. sugar
  • 1 1/2 c. water
  • 1 small can whole tomatoes
  • 1 Tbsp. soy sauce
  • 1 c. rice

    Fry bacon

    until almost crisp.

    Add onion, green pepper and minced garlic.

    Cook until onion is clear.

    Add tomatoes, salt, sugar, soy sauce and water.

    Bring to a boil.

    Reduce heat; simmer 30 minutes.

    Add rice to mixture and bake in oven, covered, for 30 minutes or until done.

    Stir after 15 minutes in oven.

    Add water in small amounts if needed.
