- 4 Tbsp. olive oil
- 1 onion, chopped
- 2 clove garlic, minced
- 1 rib celery, diced
- 1 c. chopped mushrooms
- 2 c. chicken broth
- 2 large tomatoes, peeled and chopped
- 1 c. long grain rice
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Preheat oven to 375°.

2Lightly oil a 2-quart casserole.

3Heat the olive oil in a skillet and add the onion, garlic, celery and mushrooms.

4Cook over medium-low heat, stirring often, for 5 minutes.

5Transfer to a casserole and add the tomatoes, rice, salt and pepper.

6Pour in the broth, stir, cover and bake 30 minutes. Stir again and bake for another 30 minutes.
