Spanish Rice

  • 1/2 c. butter
  • 1 onion, finely diced
  • 1 rib celery, finely chopped
  • 1/3 green pepper, finely diced
  • 1/2 c. uncooked rice
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1 (1 lb.) can tomatoes
  • 1 c. water

Directions

    Cook about 5 minutes over meduim heat until limp.

    Stir in the uncooked rice.

    Saute about 2 minutes with vegetables.

    Add salt, sugar, tomatoes (chopped up) and water.

    Bring to a boil, then turn down to a simmer for 25 to 30 minutes, until rice is tender. Stir occasionally with fork.
