- 1/2 c. butter
- 1 onion, finely diced
- 1 rib celery, finely chopped
- 1/3 green pepper, finely diced
- 1/2 c. uncooked rice
- 1/2 tsp. salt
- 1 tsp. sugar
- 1 (1 lb.) can tomatoes
- 1 c. water
Directions

1Cook about 5 minutes over meduim heat until limp.

2Stir in the uncooked rice.

3Saute about 2 minutes with vegetables.

4Add salt, sugar, tomatoes (chopped up) and water.

5Bring to a boil, then turn down to a simmer for 25 to 30 minutes, until rice is tender. Stir occasionally with fork.
