Spanish Rice

  • 1/2 lb. bacon
  • 1 c. diced onions
  • 1/2 green pepper, diced
  • 1/2 red pepper, diced
  • 1 1/2 c. raw rice
  • 1 large can tomatoes
  • 1 can tomato soup

Directions

    Brown the bacon, drain and cut into snippets (small pieces). Saute the veggies in some of the bacon grease.

    Add rice and saute until veggies are somewhat crispy.

    Add tomatoes, soup and bacon pieces.

    Cook in heavy pan, about 1 hour, on top of stove.

    Stir to keep from sticking.

    May need a little moisture added.
