- 4 slices bacon
- 1/4 c. chopped onion
- 1/4 chopped green pepper
- 1 c. rice (makes 3 c. when cooked)
- 1 (16 oz.) can tomatoes
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- Parmesan cheese
Directions

1Fry bacon until crisp.

2Place in 1 1/2-quart baking dish.

3Add onion and green pepper to bacon grease and saute until onion is yellow.

4Combine in baking dish with boiled rice, tomatoes, bacon (crumbled), salt and pepper.

5Sprinkle Parmesan on top and bake, uncovered, for 25 to 30 minutes in a 400° oven.

6Makes 6 to 8 servings.
