Spanish Rice

Ingredients

  • 2 c. uncooked rice
  • 2 c. broth (chicken, beef or vegetable)
  • 1 c. tomato sauce
  • 1 c. salsa (mild)
  • 1 medium onion, finely chopped
  • 1 tsp. minced garlic
  • 1 Tbsp. oil
  • 2 stalks celery, finely chopped
  • 2 tsp. chili powder

    Coat nonstick frypan with Pam cooking spray.

    Add oil.

    Saute onion, garlic and rice.

    Saute over medium heat 5 to 10 minutes until rice looks pearly or slightly golden.

    Add celery, chili powder and remaining liquid.

    Bring to a boil.

    Reduce heat to low and cover.

    Simmer 25 to 30 minutes until all liquid is absorbed. Serve with tortillas, refried beans, grated cheese and green salad.
