Ingredients
- 2 c. uncooked rice
- 2 c. broth (chicken, beef or vegetable)
- 1 c. tomato sauce
- 1 c. salsa (mild)
- 1 medium onion, finely chopped
- 1 tsp. minced garlic
- 1 Tbsp. oil
- 2 stalks celery, finely chopped
- 2 tsp. chili powder
Directions

1Coat nonstick frypan with Pam cooking spray.

2Add oil.

3Saute onion, garlic and rice.

4Saute over medium heat 5 to 10 minutes until rice looks pearly or slightly golden.

5Add celery, chili powder and remaining liquid.

6Bring to a boil.

7Reduce heat to low and cover.

8Simmer 25 to 30 minutes until all liquid is absorbed. Serve with tortillas, refried beans, grated cheese and green salad.
