Spanish Rice

Ingredients

  • 1 chorizo, ham or chicken, chopped in small pieces
  • 1/2 green pepper
  • 1 medium onion
  • 1/4 c. pimento
  • 4 chicken bouillon cubes
  • 1 can tomato sauce
  • 1 c. regular rice
  • 1 tsp. salt
  • 3 c. water

Directions

    Cook meat, if needed, then fry together with diced onion and green pepper until tender.

    Add tomato sauce, pimento, bouillon and salt.

    Bring to boil.

    Add rice (rinse well).

    Add water; bring to a boil.

    Cover and cook slowly at low heat for 1/2 hour, or place in oven at 350° for 1/2 hour.

    Makes 6 to 8 servings.
