  • 1 c. brown rice
  • 1 c. water
  • 2 c. tomato puree
  • 1 medium onion, cut fine
  • 1/2 green pepper, chopped
  • 1/2 c. celery, chopped
  • 1 medium carrot, diced
  • 1 can tomato sauce
  • 1 tsp. salt
  • 1 or 2 slices bacon, cut in bits

    Rinse rice and place in skillet or 2-quart saucepan.

    Add water,

    tomato puree and salt; allow to stand while preparing other ingredients.

    Add cut vegetables, tomato sauce and bacon. Place on low heat and cook 30 to 35 minutes.

    When half done, lift lid and stir, then cover and finish cooking.
