Spanish Rice

  • 4 slices bacon, diced
  • 1 medium green pepper
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 1/2 lb. ground beef
  • 1 (16 oz.) can tomatoes
  • 1 c. long grain rice
  • 1 c. water
  • 1 1/2 tsp. hot sauce
  • 1 tsp. salt

Directions

    In skillet over medium heat, cook bacon until crisp, stirring often.

    With slotted spoon, remove to paper towels.

    In drippings, over medium heat, cook green pepper, onion and garlic until tender crisp.

    Remove to bowl.

    In same skillet, brown ground beef.

    Add tomatoes with liquid, rice, water, seasonings and green pepper mixture.

    Heat to boiling.

    Reduce heat to low.

    Cover and simmer for 20 minutes until rice is tender.

    Stir occasionally.

    Sprinkle with cooked bacon.
