- 1 medium onion, finely chopped
- 1/2 c. green pepper, finely chopped
- 1/4 c. mild light flavored olive oil
- 1 c. raw long grain rice
- 2 c. chicken broth
- 1 c. tomato sauce
- 1/2 tsp. ground cumin
- 1/4 tsp. black pepper
- 1/4 tsp. salt
Directions

1Saute onion and green pepper in olive oil over medium heat in skillet until tender.

2Add rice, stirring, until it turns a whitish gold, about 3 or 5 minutes.

3Add chicken broth, tomato sauce, cumin, pepper and salt.

4Bring to a boil; reduce heat to low and simmer uncovered for 20 minutes or until rice is done.
