Spanish Rice

Ingredients

  • 1 lb. ground beef, cooked and drained
  • 2 Tbsp. onion, minced
  • 1 clove garlic, minced
  • 1/2 c. canned diced tomato
  • 2 (8 oz.) cans tomato sauce
  • 1/2 bell pepper, diced
  • 1/2 tsp. salt
  • 1/2 Tbsp. sugar
  • pinch of ground pepper
  • 1/2 c. black olives, diced
  • 1 1/2 c. dry rice (3 c. cooked rice, if cold rice, 3 1/2 c.)
  • 1 c. grated Cheddar cheese

Directions

    Cook ground beef and drain fat.

    Add minced onion and continue cooking for 5 minutes.

    Spray a small baking dish with nonstick cooking spray (or lightly grease dish).

    Mix all ingredients in the dish, except save 1/2 the cheese to sprinkle on top.

    Sprinkle cheese on top and cover the dish with aluminum foil.

    Bake it in a 350° oven for 30 minutes.
