- 1 Tbsp. shortening
- 1 c. uncooked long grain rice
- 1 onion, finely chopped
- 1 small can chicken broth
- 1 c. water
- 1 1/2 c. tomatoes, chopped
Directions

1Melt shortening in heavy skillet.

2Pour in rice and onion; brown over low heat, stirring frequently.

3Add broth and tomatoes. Do not stir.

4Cover and let steam over low heat for 30 to 45 minutes.

5Serve immediately.
