Ingredients

  • 1 cup rice, uncooked
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 12 cups chicken broth
  • 1 12 cups water
  • salt, to taste
  • pepper, to taste

Directions

    Saute rice, onion and garlic until rice is slightly brown and onion is softened.

    Add remaining ingredients and bring to a boil.

    Cover and turn down heat to medium-high for about 25-30 minutes until rice is soft and liquid is gone.
