- 3 slices bacon, diced
- 1 c. rice
- 1 qt. tomatoes
- 1 c. onion, diced (1 large)
- 1 c. green pepper
- 1/2 c. water
- 1 tsp. salt
- 1 tsp. chili powder
- 1/2 c. melted shortening or salad oil
- 2 c. sifted flour
- 3 tsp. baking powder
- 1 c. brown sugar, firmly packed
- 1/4 tsp. salt
- 2 eggs
- 1 c. milk
- 1 c. chopped nuts
Directions

1Sift flour again with baking powder, cinnamon and salt into mixing bowl.

2Beat eggs slightly.

3Stir in milk, shortening and brown sugar.

4Add to dry ingredients all at once and mix quickly. Stir in nuts.

5Spoon into muffin cups and bake in moderately hot oven at 375° for 12 to 15 minutes.

6Makes 12 large muffins.
