- 1 lb. ground beef
- 1 medium onion, chopped
- 1 to 2 stalks celery, chopped
- 1 1/2 c. uncooked rice
- 4 c. stewed tomatoes
- 1 Tbsp. chili powder
- sliced Velveeta cheese
- salt and pepper to taste
Directions

1Cook ground beef, onion and celery until beef is browned and onion and celery soft.

2Add rice and tomatoes.

3Cook with lid on at low temperature until rice is cooked (approximately 30 minutes).

4Stir in seasonings.

5You may need to add 1/2 cup water to help rice cook if tomatoes don't have much liquid.

6Just before serving, cover with cheese slices so cheese melts over top.
