Spanish Rice Supper

  • 2 medium onions, chopped
  • 1 small green pepper, seeded and chopped
  • 2 Tbsp. butter
  • 1 lb. ground chuck beef
  • 1 (10 1/2 oz.) can condensed tomato soup
  • 1/2 c. water
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp. salt
  • pinch of dried basil
  • pinch of dried oregano
  • 2 c. hot, cooked rice
  • 1 small can pimentos, cut up

Directions

    In a skillet, cook onions and pepper in butter about 3 minutes, until soft.

    Add beef and cook until lightly browned. Stir in tomato soup, water, vinegar, salt, basil and oregano, blending well.

    Stir in the cooked rice and pimento.

    Put in 2-quart casserole dish and bake at 350° for 30 minutes.
