Spanish Rice Supper

Ingredients
- 2 medium onions, chopped
- 1 small green pepper, seeded and chopped
- 2 Tbsp. butter
- 1 lb. ground chuck beef
- 1 (10 1/2 oz.) can condensed tomato soup
- 1/2 c. water
- 2 Tbsp. red wine vinegar
- 1/2 tsp. salt
- pinch of dried basil
- pinch of dried oregano
- 2 c. hot, cooked rice
- 1 small can pimentos, cut up
Directions

1In a skillet, cook onions and pepper in butter about 3 minutes, until soft.

2Add beef and cook until lightly browned. Stir in tomato soup, water, vinegar, salt, basil and oregano, blending well.

3Stir in the cooked rice and pimento.

4Put in 2-quart casserole dish and bake at 350° for 30 minutes.
