- 1 pound Hot Italian Sausage
- 1/4 whole Yellow Onion, Diced
- 1/2 cups Bell Peppers, Diced
- 4 whole Eggs, Beaten
- 1/2 cups Heavy Cream
- 1/2 cups Sharp Cheddar Cheese, Shredded
- 1 dash Salt And Pepper
- 8 whole Flour Tortillas
- 1 dash Taco Sauce
Directions

1Start with the sausage. If you bought the sausage in the casings, remove them from the casings. Add the sausage, onions and peppers to a large skillet and cook low and slow, breaking up the sausage pieces with a wooden spoon while it cooks.

2While the sausage, onions and peppers are cooking, crack the eggs and whisk together in a medium bowl. Mix in a splash of heavy cream (about 2 tablespoons or so) and cheese. Season with salt and pepper.

3Once the sausage is almost cooked through, pour the egg mixture in and continue cooking low and slow. Stir occasionally until done, about 5-10 minutes.

4To assemble the burritos, add a couple of spoonfuls of the sausage and egg mixture to a flour tortilla. Add taco sauce to taste. Roll the tortilla up and secure shut with a toothpick.
