Spanish Tortilla Loaf

Ingredients
- 3 Tbs. olive oil
- 3 medium-sized potatoes, peeled and thinly sliced
- 1 medium red onion, thinly sliced
- 1 7-oz. jar roasted red peppers, drained and thinly sliced
- 4 large eggs, beaten
Directions

1Preheat oven to 325F.

2Coat 9x5-inch loaf pan with cooking spray.

3Heat olive oil in large nonstick skillet over medium heat.

4Add potatoes, and saute 5 minutes, or until they begin to brown.

5Add onion, and cook 5 to 7 minutes, or until potatoes are tender.

6Remove from heat, and stir in red pepper slices.

7Season to taste with salt and pepper, and transfer to loaf pan.

8Pour eggs evenly over potato mixture.

9Set loaf pan in large roasting pan, and place on middle rack of oven.

10Pour hot water into roasting pan until it reaches halfway up loaf pan.

11Bake 20 to 25 minutes, or until eggs are set.

12Slice and serve immediately, or let sit 20 minutes, then unmold and slice.
