Spanish White Bean Soup

  • 2 cups white beans, dried
  • 7 cups water
  • 1 onion, chopped
  • 6 to 7 cloves garlic, minced
  • 2 potatoes, peeled and chopped
  • 1 can artichokes, water-packed, drained
  • 1 can black olives, sliced, drained
  • 1 can tomato sauce
  • 1 tsp. Italian herb mix

Directions

    Place the beans in a large pot with the water.

    Cover and cook over medium heat for 1 hour.

    Add the onion and garlic and continue to cook until the beans are tender, 1 to 1-1/2 hours.

    add the potatoes and cook another 20 minutes.

    Add the remaining ingredients and cook for about 10 more minutes.
