- 2 whole Meyer Lemons
- 2 teaspoons Salt
- 2 teaspoons Pepper
- 2 whole Garlic Cloves, Peeled And Sliced
- 4 sprigs Tarragon
Directions

1Preheat the oven to 400 degrees F.

2Lay the butterflied chicken on a rack over a baking sheet.

3Squeeze the lemon over the skin and then place the lemon rounds on top.

4Season it with salt and pepper and throw on some of the sliced garlic.

5Lay the herbs on top.

6Place the baking sheet into the oven and let it roast for 50-60 minutes.

7Once fully cooked, remove and serve.
