  • 1/2 cup softened butter
  • 7 15/16 tablespoons granulated sugar
  • 2 eggs
  • 1 1/8 cups flour
  • 1 1/4 teaspoons baking powder
  • salt
  • 4 tablespoons milk
  • 1/4 teaspoon ground cinnamon
  • 4 3/8 ounces speculoos spread
  • 1 15/16 cups mascarpone
  • 4 tablespoons heavy cream

    Preheat oven to 350 degrees Fahrenheit.

    In a bowl, mix the softened butter and sugar until it is pale.

    Add the eggs, one at a time while mixing.

    Add the flour, baking powder, and a pinch of salt. Mix

    Stir in the milk and the cinnamon. Mix.

    Fill the muffin cups 2/3 full with the batter. Put 1 teaspoon of Speculoos spread in the middle of each cupcake.

    Bake them for 20 minutes at 350 F.

    To prepare the Speculoos icing, whisk 125 grams of Speculoos spread with the mascarpone and heavy cream at low speed.

    Using a piping bag, decorate the cooled cupcakes as you wish.
